Zesty Lemon and Herb Guacamole

This recipe for zesty lemon and herb guacamole is perfect as a healthy snack with vegetable sticks or tortilla chips. Full of lemon juice and zest, fresh coriander and spring onions, it’s a great way to eat healthily

Ingredients

2 ripe avocados
1 lemon
1 clove garlic crushed
1 spring onion finely sliced
15 g small handful of coriander cilantro leaves, roughly chopped
Pinch Salt optional

Metric - US Customary

Instructions

Remove the avocado skins and stones.
Grate the zest of the lemon onto the avocado. Squeeze the juice from one half of the lemon over the avocado. Mash well with a fork.
Add the garlic, spring onion and coriander and stir in.
Season and squeeze over a little extra lemon juice to taste.
Serve with tortilla chips.
