Nigella Seed and Tomato Quick Bread

A quick and easy recipe for homemade soda bread flavoured with tomato and nigella seeds. It's lovely with soups and stews.

Ingredients

300 g plain white flour
200 g plain wholemeal flour You can replace it with spelt flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
2 tablespoon olive oil
250 ml yogurt I use Greek natural yogurt
50 ml water
50 ml tomato puree
1 teaspoon nigella seeds

Instructions

Put the baking tray in the oven and preheat to 200C
Mix all the dry ingredients in a bowl. Make a well in the centre.
Add in the wet ingredients and mix together until fully combined but don't over mix.
Flour a work surface and turn the dough out onto it.
Bring the dough together with your hands to form a loaf shape.
Take the baking tray out of the oven. Sprinkle a tablespoon of flour on it to stop the dough from sticking. Put the dough onto it and use a knife to cut down almost to the baking tray to make a deep cross on the loaf.
Bake in the oven for 25-35 minutes.

Feel free to use buttermilk in place of the yogurt and water. Or use milk plus a teaspoon of lemon juice.
