Ingredients

1 cucumber diced
3 tomatoes diced
1 red onion diced
1 chilli pepper sliced, seeds removed if you want less heat
1 lemon juiced
2 tablespoon coriander leaves chopped
1 tablespoon mint leaves chopped
pinch salt
pinch pepper

Instructions

Prepare all the vegetables.
Mix together and squeeze over the lemon juice.
Season to taste with a little salt and pepper.
