Creole Potato Waffles

These Creole potato waffles are such a simple idea and so easy to make in your waffle maker! You only need two ingredients! Potatoes and creole spice blend! What are you waiting for?

2 Baking potatoes
1 teaspoon Creole seasoning I used Bart
1 teaspoon Vegetable oil I used light olive oil

Instructions

Grate the potatoes. I use a food processor and keep the skins on but you can grate them by hand and peel the skins if you want too. I don't find they are noticeable in this recipe once cooked.
Wrap the grated potato in a tea towel and squeeze to get rid of any excess moisture.
Stir the Creole spice blend into the grated potato.
Brush the waffle maker with a little oil and heat up.
Add the potato and cook for about 12 minutes. If you feel it is not cooked enough feel free to cook for a little bit longer.
