Chipotle Lime Chicken

This easy chipotle lime chicken recipe starts with a simple lime and chipotle marinade that has so much flavour. Perfect if you love spicy chicken dishes that are quick and easy to prepare. Healthy and full of flavour, it's ideal for a simple midweek meal but tasty enough for entertaining too! It's taken from The Food Bible by Judith Wills.

Ingredients

1 lime juiced and zested
1.5 tablespoon extra virgin olive oil
1 tbsp coriander leaves roughly chopped (cilantro)
1 red chilli pepper diced
2 teaspoon smoked chipotle paste
2 cloves garlic crushed
1 teaspoon agave nectar or maple syrup`
½ teaspoon ground coriander
¼ teaspoon salt
Pinch black pepper
2 chicken breasts sliced in half

Instructions

Mix together all the marinade ingredients and then coat the chicken in the marinade. Put in the fridge for at least 2 hours.
Put the chicken in a single layer in an oven proof dish and bake it in a preheated oven at 190°c for 20 minutes. Baste the chicken with the marinade half-way through.
Check the chicken is cooked by inserting a fork and seeing if the juices are clear. If not cook for an extra 5 minutes.
